Our story
A flat-top, a cleaver, and a lot of fried rice.
503 Hibachi is a teppanyaki food cart on TV Highway in Aloha, with a second cart on Pacific Highway in Tigard. The area code is in the name because that is where we cook.

The food
Cooked to order, every plate.
Nothing sits under a heat lamp. When you order, the protein and the vegetables go on the flat-top and the plate comes off when it is done. Steak gets cooked to the temperature you ask for. That is why calling ahead is a good idea and why the reviews keep saying the wait is worth it.
The sauces are made in house and fresh daily: the 503 Sauce and the seafood sauce come with every entree, with garlic butter and teriyaki available on the side. The fried rice is garlic, egg, chicken and house seasoning. The yakisoba is made with Japanese yakisoba sauce.
Two carts
Aloha first. Then Tigard.
The Aloha cart on SW Tualatin Valley Highway is the original: a covered dining area, a 4.8 on Google across more than two hundred reviews, a 4.9 on Yelp, and in 2025 a spot on Yelp's Top 100 Food Trucks in the United States.
The Tigard cart opened on Pacific Highway, in the Broadway Furniture parking lot near Hall Boulevard, and runs the same menu with its own hours.

Who runs it
Small, owner-run, veteran-owned.
503 Hibachi is a small business, not a chain. On Google it identifies as veteran-owned, women-owned, Asian-owned and disabled-owned. The owners answer reviews themselves, and the phone is the way to order.
